Vineyard and terroir
The grapes are grown in the Agrigento area of southwestern Sicily, in vineyards at 200–600 m above sea level. The medium-textured sandy-silty soils are alkaline due to their limestone content. The vines average 15 years of age, and yields do not exceed 9 t/ha.
Vinification
The grapes are harvested in September and pressed as whole bunches. The must is settled at low temperature, then fermented in stainless steel tanks at a controlled 16 °C for 15 days. Malolactic fermentation is prevented.
Ageing
The wine matures for three months in concrete tanks, followed by two months in bottle.
