Vineyard and terroir
The grapes grow around Canicattì, Naro and Campobello di Licata, in vineyards at 300–400 metres above sea level. The clay-silt and loamy soils are rich in organic matter. The vines average 60 years of age. Yields do not exceed 9 t/ha for Grillo and 7.5 t/ha for Chardonnay.
Vinification
Chardonnay is harvested at night in the first days of August; Grillo is picked at night during the second ten-day period of the month. The varieties are vinified separately. Grillo ferments in stainless steel at approximately 16 °C for around 15 days. Chardonnay ferments in fine-grained French oak barriques. Malolactic fermentation is prevented, and the two wines are blended before bottling.
Ageing
Grillo rests on its lees for eight months, while Chardonnay ages in barriques for the same period. After bottling, the blend spends a further nine months in the winery’s cellars.
