Vineyard and terroir

Chardonnay adapts to the Salento landscape, where maritime breezes contribute to a fresh, fruit-led expression. The vines are espalier-trained and Guyot-pruned.

Grapes

Chardonnay.

Vinification

After destemming, the grapes are cooled and gently pressed. The must is held at 10°C so that it clarifies naturally. Alcoholic fermentation proceeds in temperature-controlled stainless-steel tanks at 15–16°C. The absence of oak is intended to preserve the variety’s freshness and direct character.

Ageing

Ageing takes place exclusively in stainless-steel tanks.

Tasting profile

Bright straw yellow with green highlights. The precise, clean bouquet opens with apple, pear and lemon zest, followed by slightly underripe banana, wildflowers, restrained herbal nuances and white spice. The palate is lively and fresh, driven by pleasant acidity. Its slender but balanced structure carries a saline note throughout, while the clean finish reprises citrus and floral tones.

Serving and pairing

Serve at 11°C. Its fresh, linear profile suits seafood appetisers, white-fish tartare, octopus salad, vegetable tempura and light pasta dishes with herbs or citrus. Salento pairings include white mussels alla tarantina, vegetable pittule, marinated bluefish, grilled baby cuttlefish and friselle with cherry tomatoes, olive oil and capers. It also works with fresh cheeses such as giuncata and burrata.

The wine retains its freshness and savoury character for approximately two years.
