Vineyard and terroir
A varietal Negroamaro shaped as a contemporary, everyday expression of Salento. The vines are espalier-trained with spur-pruned cordons.

Vinification
After destemming and crushing, the must remains on the skins for approximately five to seven days. Fermentation is maintained at 22–24°C. The wine is made without oak to preserve varietal aromas and freshness.
Ageing
Ageing takes place in stainless-steel tanks until bottling.
Label / history
The narrative links the grape’s name to the words niger and mavros, meaning “black” in Latin and Greek respectively. This pairing reflects the meeting of the two Mediterranean cultures and frames the wine as a return to the direct, unadorned Negroamaro traditionally served at the everyday table.
Tasting profile
Bright ruby red with violet highlights. The intense but composed nose offers ripe cherry, plum and violet, followed by black pepper, herbal tones and a mineral nuance reminiscent of Salento’s red soils. The palate is direct and smooth, with balanced freshness and gentle, integrated tannins. Savoury and agile, it follows the aromatic profile and ends with the variety’s characteristic pleasantly bitter note. The structure is measured, and the finish remains dry and inviting.
Serving and pairing
Serve at 16°C. Suitable dishes include legume soups, herb frittatas, savoury pies, roast chicken and pasta with fresh tomato sauce or eggplant. Salento pairings include braised horse meat, parmigiana di melanzane, sagne ncannulate with tomato sauce, fried bread dumplings, fave e cicoria and pezzetti di cavallo al sugo.
The wine is ready to drink. It can undergo delicate aromatic development over the following two to three years, after which its tannic component gradually softens.
