Vineyard and terroir
The grapes come from familiar vineyards rooted in deep red soils, which absorb heat and release it gradually to the vines. Harvest takes place earlier than for more muscular interpretations of Primitivo, with the aim of preserving freshness, balance, and drinkability. The vines are trained on espalier with spur-pruned cordons.

Vinification
The grapes are destemmed and crushed. The must remains on the skins for approximately 5–7 days, with fermentation at 22–24°C.
Ageing
Most of the wine remains in stainless steel. A small portion is matured in American oak barriques.
Tasting profile
Deep, clear, compact ruby red, with subtle violet reflections when young. The nose is led by ripe cherry, blackberry, and dried plum, followed by black pepper, cinnamon, licorice, and measured toasted and vanilla nuances from oak. The palate is warm, rounded, and substantial without becoming heavy. Fresh acidity balances the structure, while the tannins are soft and well integrated. Fruit and spice linger through a dry, clean, persistent finish.
Serving and pairing
Serve at 18°C. Its balance of body and suppleness suits grilled meats, lasagna, beef stews, roast pork, rich ragù-based pasta, legume soups, and semi-aged cheeses. Traditional Salento matches include pezzetti di cavallo, roast lamb with potatoes, sagne ncannulate with ragù, torcinelli, and trippa alla leccese.
Ageing potential
Approachable on release, with the capacity to develop gracefully for 3–4 years.
