Vineyard and terroir
The fruit is selected from carefully chosen vineyards, mainly in the traditional Primitivo zone between the Ionian coast and the Taranto hinterland. This transitional area shapes a style combining strength and grace, structure and tension. The vines are trained as alberello and on espalier with spur-pruned cordons, and the grapes are picked at full ripeness from late August through the first ten days of September.
Grapes
100% Primitivo.
Vinification
Fermentation takes place at variable temperatures of 22–26°C. Maceration lasts 8–12 days, with daily délestage during the first 4–5 days followed by gentle wetting of the cap.
Ageing
After malolactic fermentation, the wine matures in barriques. The oak regime combines new, second-use and third-use French barrels with a small proportion of American oak, intended to support the wine without dominating it.
Tasting profile
Deep, luminous ruby red with subtle garnet nuances. The broad, layered aroma combines cherry in spirit, ripe plum and dark woodland fruit with black pepper, clove, liquorice, vanilla and delicate toast; sweet tobacco and cocoa emerge with air. Full-bodied and velvety, the palate has soft, integrated tannins. Noticeable warmth is balanced by freshness, leading to a long, harmonious finish marked by fruit and spice. The style combines richness and restraint.
Serving and pairing
Serve at 18°C. The wine suits bold, aromatic dishes with richness or savory depth: braised beef cheek, herb-crusted lamb, glazed pork ribs, richly dressed baked pasta and mature flavorful cheeses. Regional matches include pezzetti di cavallo al sugo, lamb with potatoes and lampascioni, rich parmigiana, and sagne ncannulate with mixed-meat ragù.
It is approachable now and has an ageing capacity of at least five years.
Label / history
This was the last wine dedicated to Teresa, following the Chardonnay and Negroamaro. It completes the sequence with Primitivo, presented as an emblematic grape of southern Italy. Its conception reflects more than thirty years of work with the variety and a pursuit of balance, depth and quiet strength.
