Questo vino
Vineyard and terroir
The fruit comes from vineyards in the heart of the Sorbara D.O.C. zone, in the hamlet of Cristo, 200 metres from the Secchia River.
Grapes
100% Lambrusco di Sorbara.
Vinification
The grapes are harvested by hand and pressed immediately. Alcoholic fermentation takes place in stainless-steel tanks at controlled temperature. In spring, after the cuvée has been selected, secondary fermentation begins in bottle according to the traditional method.
Ageing
The traditional-method process in bottle lasts at least 24–30 months. Following disgorgement, the wine is topped up with a portion of the same wine and liqueur d’expédition. This house method is intended to preserve balance on the palate.
Technical data
- Alcohol: 12% vol.
- Residual sugar: 7 g/L
- Bottle size: 75 cl
Tasting profile
Bright pink with pale onion-skin reflections. The delicate bouquet opens with rosehip and orange blossom, developing notes of strawberry, slightly underripe raspberry and citrus peel. The palate is firm and vertical in structure, animated by freshness, with a harmonious fruit-driven body and a mineral, savoury finish.
Serving and pairing
Serve at 6–8°C. Suitable as an aperitif with charcuterie and cheese boards, and with raw seafood or white meats. It also accompanies refined Italian and international dishes, its acidity providing contrast while the variety’s fruit and the traditional method’s mineral character remain balanced.
Label / history
Rosé del Cristo presents a different expression of Lambrusco: a vintage traditional-method rosé made solely from Sorbara grapes grown within its designated D.O.C. territory. It emerged from the estate’s focus on quality and innovation and became part of the modern history of Cantine Cavicchioli’s Lambrusco production.
