Vineyard and terroir
Merlot is grown on the steep slopes around Sambuca di Sicilia in the province of Agrigento. The vineyards overlook Lake Arancio and occupy sites chosen for their capacity to develop pronounced fruit and aromatic structure.

Vinification
The grapes are lightly pressed to avoid extracting green tannins. Controlled-temperature fermentation proceeds with skin contact for 10–12 days, with remontage every four hours.
Ageing
Matured in stainless-steel tanks.
Tasting profile
Deep ruby red. The nose is fruit-driven, with blackberry and redcurrant. The palate is enveloping and persistent, with a well-defined structure and notes of spice and fruit.
Serving and pairing
Serve at 16–18 °C. Pair with lasagne, chicken cacciatora, grilled chicken or seared tuna.
