Vineyard and terroir
Nero d’Avola is cultivated around Sambuca di Sicilia in the province of Agrigento. The product page places the vines at 350 m above sea level on fresh soils containing limestone and clay. Lake Arancio helps sustain access to water and nutrients during periods of severe drought, supporting fresh fruit character and balanced acidity. The technical sheet describes vineyards on the steep slopes of the Sambuca area overlooking the lake.
Grapes
Nero d’Avola from organically grown vineyards.
Vinification
The technical sheet describes fully ripe grapes that are crushed and destemmed, then fermented for 15 days at 25 °C with regular daily pump-overs. Following fermentation, half of the wine is transferred to concrete tanks and half to barriques, where malolactic fermentation takes place. The product page instead describes light pressing to avoid green tannins, controlled-temperature maceration for approximately 10–12 days and remontage every four hours.
Ageing
The barrique portion ages for four months. The wine is subsequently clarified, filtered and bottled. The technical sheet assigns the other half of the wine to concrete tanks.
Tasting profile
The technical sheet presents a deep, opaque ruby-red wine of medium body. Aromas combine red cherry and juicy blue fruit with wild herbs, liquorice, dried rose petals and nutmeg, followed by vanilla, dark chocolate, coffee and cinnamon. The palate balances elegance and concentration, with a fine texture, refined tannins and a fresh, mouth-watering finish. The product page gives an alternative profile of brilliant deep red with purple highlights and aromas of liquorice, clove, prune, cherry, blackberry and blackcurrant.
Serving and pairing
Serve at 16–18 °C. Pair with pasta in sauce, roast meat, game and mature cheeses. The product page additionally suggests first courses, barbecued meat and game birds.
