Vineyard and terroir
The grapes are grown at Sambuca di Sicilia in the province of Agrigento. Limestone soils and the proximity of Lake Arancio provide effective drainage, encouraging the vines to develop deep roots in search of water and nutrients. Sunshine at the elevated vineyard sites promotes aromatic concentration while retaining vibrant acidity. The resulting fruit contributes minerality and freshness to the wine.
Grapes
Grillo.
Vinification
The grapes undergo soft pressing under strictly reductive conditions. The must then ferments at low temperature to preserve and enhance its aromatic character.
Ageing
Matured in stainless-steel tanks.
