Vineyard and terroir
The Sangiovese comes from various plots in Località Capraia, with fruit selected from cooler areas. The 45-hectare vineyard holding has varied exposures and an average altitude of 300 metres. Its medium-textured soils contain clay and Galestro stone. Vine age ranges from new plantings to 35 years, at a density of 5,000 vines per hectare and an average yield of 1.2 kg per plant. Both spur and cane pruning are used. Early harvesting helps retain freshness and finesse.
Grapes
100% Sangiovese.
Vinification
Direct pressing provides 50% of the must. The other half remains in contact with the skins for four hours before the cap is raised. The two portions are reunited, and alcoholic fermentation continues for 7–8 days at 15–17°C.
Ageing
Two months on the fermentation lees precede bottling.
Tasting profile
Pale antique pink. The bouquet combines hawthorn, rose and wisteria with white fruit and subtle tropical nuances. Tropical and intense fruit impressions return on the palate, framed by freshness and minerality. The overall profile is delicate, elegant and highly drinkable.
Serving and pairing
Serve at 10°C. Suitable as an aperitif and with medium-aged cured meats, savoury pies, appetizers, pasta with vegetable- or fish-based sauces, white meats, and steamed or baked fish.
