Vinification
After crushing, the grapes undergo cryomaceration to extract primary aromas from the inner surface of the skins, intensifying the wine’s fruit character. Thirty percent ferments in new tonneaux and remains on its lees for 6 months, while the other 70% ferments in stainless steel at 16 °C.
Ageing
The tonneaux-fermented portion remains on its lees for 6 months.

Tasting profile
An intense, bright colour with green-gold reflections. The broad bouquet combines jasmine and hawthorn with fruit and delicate, elegant vanilla nuances. The palate shows strong correspondence with the aromas, alongside personality, substantial structure, savouriness, elegant acidity and persistence.
Serving and pairing
Serve at 12 °C with white meats, vitel tonné or roasted fish.
Label / history
The wine takes its name from the Febei, one of medieval Orvieto’s most important and powerful families, connected by marriage to the Clementini, Piccolomini and Coelli families. Its best-known member was Bishop Francesco Maria Febei, author of works about the Jubilee and founder of a library in his palace that was open to the public. Palazzo Febei and a square bearing the family name remain in Orvieto. The name was selected for a wine intended to represent the Orvieto Classico Superiore style.
