Vineyard and terroir
The grapes grow on soils selected through Carpineto’s zoning research to identify areas suited to white grape varieties.
Grapes
A blend of Chardonnay, Sauvignon Blanc and Grechetto is used, with each variety vinified separately.
Vinification
The grapes are harvested at optimal ripeness and destemmed before undergoing skin maceration. After pressing separates the juice from the solids, the juice is settled and fermented in temperature-controlled stainless-steel tanks. The young wine is filtered immediately and held at low temperatures, allowing natural stabilization while preserving the fruit character developed during fermentation. It is neither fined nor chemically stabilized before bottling.
