Vineyard and terroir
The Chardonnay comes from a 0.60-hectare vineyard on the Airali hillside in Cissone, at approximately 600 metres. Alta Langa occupies the high hills of southern Piedmont toward the Ligurian Apennines, with sedimentary calcareous-marl soils. Pinot Noir and Chardonnay vineyards have been planted in the area since a regional research initiative began in 1990.
Grapes
100% Chardonnay. The pure-variety Extra Brut was developed following experimental vinifications that highlighted Chardonnay's acidity, savoury character and finesse, together with a vertical progression of flavour on the palate.
Vinification
Whole bunches are placed in a pneumatic press. The free-run juice is discarded, and juice obtained from the following pressing cycles is fermented at 18°C to create the base wine. In March after harvest, the wine is bottled for secondary fermentation.
Ageing
At least 30 months on the lees in stacked bottles. Liqueur d’expédition is added during disgorgement.
Tasting profile
Straw yellow with greenish reflections and a fine, persistent perlage. The intense, distinctive bouquet combines delicate bread-crust and white-flower notes. The palate is savoury and elegant, with lively acidity and a mineral quality.

Serve at 8–10°C.
Label / history
Airali is the name of the Cissone hillside where the vineyards grow. The first production year was 2021. Alta Langa is made only as a vintage-dated sparkling wine, expressing the character of a single harvest.
