Vineyard and terroir
Sassontino comes from one of Casanova's historic vineyards in Terricciola, in the province of Pisa. The approximately 2.02 ha site faces south-east at 200 m a.s.l., and its Sangiovese vines average 30 years of age. The sandy, marine-origin soil is rich in oceanic sediments, a feature associated with the wine's elegance and richness. Its combination of floral character and graceful structure recalls the style of Nebbiolo for Giorgio Rivetti.

100% Sangiovese.
Vinification
Maceration and alcoholic fermentation take place in temperature-controlled vats for an average of 14–15 days. Malolactic fermentation occurs in French oak barrels, with 20% new wood and the remainder used, second-passage oak.
Ageing
The wine matures for 24 months in French oak barrels, 20% new and the balance used, second-passage oak. Bottle ageing lasts at least 100 months.
Technical data
Average production is 6,000 bottles. The first vintage was 2003.
Tasting profile
The aromatic profile is floral, with black cherry and currant. The palate is decisive and dry, leading to a savory, compelling and persistent finish. Its defining traits are strength, minerality and persistence.

Serve at 16–17 °C in a Bordeaux glass.
