Vineyard and terroir
The Nebbiolo comes from the Canova vineyard in the commune of Neive in the Langhe. The vines are around 20 years old and grow at approximately 380 m on limestone and clay soils with good exposure. Warm days and cool nights help maintain acidity and aromatic precision, while the elevation contributes freshness and tension. The site brings together power and elegance, and the relatively young vines give the fruit a fairly open character.
Vinification
The Rivetti family uses a short maceration to limit tannin extraction. Fermentation takes place in neutral vessels.
Ageing
The wine matures for around 24 months in large Slavonian oak barrels. The barrels impart little perceptible oak aroma, soften the tannins and allow the terroir character to remain evident.
Tasting profile
Elegant, aromatic and structured, with a refined, restrained character, balanced power and finesse, fresh acidity and tautness.
Serving and pairing
Pairs with rich meat dishes from Northern Italy.
