Vineyard and terroir
The grapes come from the producer’s oldest vineyard, in the hills of Volpago del Montello, north of Treviso. Farmed organically, the vineyard has vines more than 30 years old rooted in red, iron-rich soils.
Grapes
The wine is made from selected Glera grapes.
Vinification
The grapes are usually harvested by hand from mid to late September, at optimal ripeness. They macerate on their skins for 15–18 hours before fermenting with natural yeasts in temperature-controlled steel tanks. A second fermentation then takes place in the bottle according to the traditional method.
Ageing
The wine rests on its lees in the bottle for 3–4 months. It is not disgorged, leaving a natural yeast sediment in the bottle.
Tasting profile
The wine has a rich aroma and an elegant taste that expresses its local terroir.
Serving and pairing
Before opening, the producer recommends slowly turning the bottle upside down two or three times.
