Vineyard and terroir
The Chardonnay comes from Tenuta di Caseo vineyards in the commune of Colli Verdi, Oltrepò Pavese, at 410 m above sea level. The predominantly clay soil contains active limestone. The vines average 20 years of age and are Guyot-trained at a density of 5,500 vines per hectare. Yield is 9,000 kg/ha, and the grapes were harvested in the second half of August.

100% Chardonnay.
Vinification
Vinification begins with gentle pressing. The free-run juice is separated from the must obtained during the second pressing, then clarified and fermented in stainless-steel tanks for ten days at a controlled temperature of 16.5°C. After four months in stainless steel, the base wine is prepared for sparkling-wine production.
Eight months later, the base wine is transferred to Champagne-style bottles with a liqueur de tirage composed of wine, sugar and selected yeasts. The sealed bottles are laid horizontally in the cellar for secondary fermentation at a constant temperature of 14–15°C.
Ageing
The wine spends 36 months on its lees. Disgorgement took place in May 2021: the deposits from secondary fermentation were removed, the liqueur d’expédition was added, and the recorked bottles were left to rest in the cellar.
Technical data
Metodo Classico VSQ from the 2017 vintage, made in a Brut style. Alcohol is 12.5% vol., total acidity is 7.30 g/L and residual sugar is 4.90 g/L. Production comprised 6,500 bottles in 750 ml format.
Tasting profile
Vivid golden yellow in color, with a fine, continuous stream of bubbles and a soft, creamy mousse. The generous aroma opens with white fruit and develops toward citron and candied citrus. The palate combines pronounced acidity and savoriness with a medium-textured profile, appealing drinkability and a long, gentle finish.
Serving and pairing
Serve at 12°C. It works as an aperitif or throughout a meal, particularly with Asian cuisine, pasta dishes, delicate risottos and light fish-based main courses.
Label / history
The name refers to the vineyards' elevation of 410 m above sea level. The wine belongs to Tenuta di Caseo's Metodo Classico range, created around the character of its Oltrepò Pavese terroir.
