Vineyard and terroir
The Pinot Nero comes from Tenuta di Caseo vineyards in the commune of Colli Verdi, Oltrepò Pavese, at 470 m above sea level. The predominantly clay soils contain active limestone. Vines average 20 years of age and are Guyot-trained at a density of 5,500 vines per hectare, with a yield of 9,000 kg/ha. Harvest took place in the second half of August.
Tenuta di Caseo lies in the upper Versa Valley in Lombardy. The estate comprises 120 hectares, including 90 hectares of vineyards and 30 hectares of woodland. Its vineyards are managed through an integrated production system designed for environmentally sustainable farming.
Grapes
100% Pinot Nero.
Vinification
The grapes underwent white vinification, beginning with gentle pressing. The free-run juice was separated from the must obtained during the second pressing, then fermented in stainless-steel tanks for 10–12 days at a controlled temperature of 16.5°C. After four months of maturation in stainless steel, the sparkling base wine was prepared.
Eight months later, the base wine was transferred to Champagne-style bottles with a liqueur de tirage made from wine, sugar and selected yeasts. The bottles were closed and laid horizontally in the cellar for secondary fermentation at a constant 14–15°C.
Ageing
The wine spent 36 months on its lees. Disgorgement took place in May 2021: the secondary-fermentation lees were removed, liqueur d’expédition was added, and the bottles were recorked and rested in the cellar.

Tasting profile
Intense straw yellow, with a dense mousse and a fine, continuous perlage. The fresh, lively aroma recalls white-fleshed fruit. Dry and structured on the palate, with persistent fruit, appealing acidity and a distinct mineral note.
Serving and pairing
Serve at 12°C. Suitable as an aperitif and with risottos, grilled fish, grilled white meats and fried foods.

The published technical information concerns the 2017 vintage. Disgorgement took place in May 2021.
Production and packaging
No products of animal origin or products containing allergens are used during production. Cellar procedures focus on resource efficiency, waste reduction and recycling. Packaging uses FSC-certified organic corks, FSC-certified label paper and recycled cardboard.
