Vineyard and terroir

The grapes come from Guyot-trained vines in hillside vineyards at Tenuta Caseo in Oltrepò Pavese, Lombardy. The sites face south-southwest and have clay soils with a substantial presence of active limestone.

Tenuta Caseo covers 120 hectares, comprising 90 hectares of vineyards and 30 hectares of woodland. The vineyards are managed under an integrated production system designed for environmentally sustainable farming.

Grapes

100% Pinot Nero.

Vinification

The grapes undergo soft pressing to extract only a small amount of color. Fermentation takes place in temperature-controlled stainless-steel vats for 15 days. The prise de mousse lasts 10 days at 17°C.

Ageing

The wine matures on the yeasts for 30 days in pressurized tanks.

No products of animal origin or containing allergens are used during production. The packaging consists of an FSC-certified organic cork, an FSC-certified paper label, and recycled-paper cardboard.

Tasting profile

Pale, bright pink with purplish reflections and a fine, persistent perlage. The nose is fragrant and floral, with delicate redcurrant notes. These fruity impressions return on the palate, which is elegant, harmonious, and mouth-filling. The finish is clean, long, and forthright.

Serving and pairing

Serve at 6–8°C. Suitable as an aperitif and with hors d’oeuvres, summer salads, soft or moderately aged cheeses, white-meat dishes, and Oriental cuisine.
