Vineyard and terroir
The Pinot Nero comes from Tenuta di Caseo vineyards at 530 m above sea level in the commune of Colli Verdi, Oltrepò Pavese. The predominantly clay soils contain active limestone. The vines average 20 years of age and are Guyot-trained at a density of 5,500 vines per hectare. Yield is 9,000 kg/ha, and harvest took place in the second half of August.
Tenuta di Caseo lies in Lombardy’s Alta Valle Versa. The estate covers 120 hectares, comprising 90 hectares of vines and 30 hectares of woodland. Its vineyards are managed through an integrated production system designed for lower-impact, environmentally sustainable farming.
Grapes
100% Pinot Nero.
Vinification
A brief period of cold contact between the grapes and their skins took place in the press under an inert atmosphere to obtain the rosé color. The grapes were then gently pressed, separating the free-run juice from the second-pressing must. Only the free-run juice was fermented in stainless-steel tanks, for 10–12 days at a controlled temperature of 16.5°C.
After four months in stainless steel, the sparkling-wine base was prepared. Tirage took place after eight months: the base wine was filled into Champagne-type bottles with a liqueur de tirage made from wine, sugar and selected yeasts. The bottles were sealed with bidules and crown caps and laid horizontally in the cellar for secondary fermentation at a constant 14–15°C.
Ageing
The wine matured for 36 months on its lees. Disgorgement took place in May 2021, removing the residue from the secondary-fermentation yeasts. Liqueur d’expédition was then added before the bottles were recorked and returned to the cellar to rest.

No products of animal origin or allergen-containing materials are used during production. The packaging includes FSC-certified organic corks, an FSC-certified paper label and recycled-paper cardboard.
Tasting profile
Pale pink with a fine perlage, the wine is elegant and lively. Its moderately evolved bouquet shows red fruit and wild-rose aromas. The palate is dry and attractively fresh, with an elegant structure and woodland-strawberry notes balancing its pronounced acidity.
Serving and pairing
Serve at 12°C. Suitable as an aperitif and with richly flavored pasta or rice dishes, selections of cold cuts and cheeses, fish, and shellfish.
