Vineyard and terroir
The grapes come from Guyot-trained hillside vineyards at Tenuta Caseo in Oltrepò Pavese, Lombardy. The vines face south-southwest and grow on clay soils containing a substantial proportion of active limestone.
Tenuta Caseo occupies 120 hectares, comprising 90 hectares of vineyards and 30 hectares of woodland that form a natural setting around the vines. The estate follows an integrated-production system designed for environmentally sustainable vineyard management.
Grapes
100% Pinot Nero.
Vinification
The must ferments for 15 days in temperature-controlled stainless-steel vats. The prise de mousse lasts 10 days at 17°C in pressurized tanks.
Ageing
The sparkling wine remains on its yeasts for 30 days in pressurized tanks (autoclaves).

No products of animal origin or ingredients containing allergens are used during production. Cellar procedures emphasize efficient resource use, waste reduction and recycling. Packaging comprises an organic FSC-certified cork, an FSC-certified paper label and recycled-paper cardboard.
Tasting profile
Bright straw-gold in color, with a fine and persistent perlage. Delicate floral and yeast-derived aromas are joined by toasted hazelnut notes. The palate is fresh and balanced, leading to an appealingly tangy finish.
Serving and pairing
Serve at 6–8°C. Suitable as an aperitif and with hors d’oeuvres or finger foods. It also pairs with sushi and sashimi, cold cuts, cheeses, risottos and fish dishes.
