Vineyard and terroir
The fruit comes from the single Montebuoni vineyard. The estate’s vineyards lie at an altitude of 500 metres, with rich soils and a favourable climate. Careful vineyard management includes a V-shaped planting system on 21 hectares, exposing more leaves to sunlight.
Grapes
Cabernet Franc was a new variety in the estate’s wines when Haiku was created.
Vinification
The grapes are hand-picked into small crates and sorted on a sorting table before destemming and gentle pressing. Fermentation takes place in stainless-steel tanks at approximately 30–32 °C with regular pump-overs, followed by 25 days of maceration. Malolactic fermentation is carried out in oak barrels.
Ageing
The wine matures in barrels for 12 months, with new barrels accounting for 30%.

Label / history
The name refers to the traditional three-line Japanese poetic form, evoking nature and longstanding traditions. Its three lines correspond symbolically to the wine’s three grape varieties. Castello di Ama was founded in 1972.
