Vineyard and terroir

Cavalchina's vineyards are in the village of Custoza, in Soave. The grape varieties are chosen to suit the local climate and soils, and yields are deliberately kept low to keep the grapes healthy and juicy.

Grapes

The blend has four varieties. Fernanda is a clone of Cortese. Each variety ripens at a different time and has its own character and winemaking approach.

Vinification

Each variety is treated separately.

  • Trebbiano and Trebbianello have a neutral character and structure, which suit them to oak barrels.
  • The aromatic Fernanda grapes are frozen before being vinified.
  • Garganega has a leaner body and a distinctive personality. It is fermented in Slavonian oak barrels of 15–20 hectolitres.

Ageing

  • Trebbiano and Trebbianello age in oak barrels.
  • Fernanda ages in stainless steel tanks.
  • Garganega ages in the same 15–20 hl Slavonian oak barrels in which it is fermented.
  • The final blend is assembled at the end of May the following year.
  • After several months of bottle ageing, the wine is released.

Tasting profile

The wine is complex and balanced, with excellent ageing potential, and it continues to show well for many years.

Label / history

"Amedeo" is named after Prince Amedeo of Savoy. He was wounded in 1866 during the Third War of Independence on the land where Cavalchina's vineyards now stand. A slate stone preserved from that time lies at the entrance to the winery.

Azienda Agricola Cavalchina was founded in the early 20th century, when the Piona family bought its first vineyards in Custoza. The family first labelled its wines as Soave. It later named them after their area of origin, Custoza. Production is fairly scarce.
