Vineyard and terroir
The grapes come from the estate's own vineyards in Bardolino, at 100 to 120 m above sea level. The vines stand on south-facing slopes with limestone and clay-moraine soils that contain pockets of gravel. Phenolic ripeness comes very late, and the region's particularly favourable climate lets the wine express its character fully. Yields are deliberately kept low so that the grapes stay healthy and juicy.
Vinification
The grapes are destemmed and pressed immediately after harvest. Fermentation is temperature-controlled at 25–28 °C and lowered to 18–20 °C towards the end. Maceration is extended as long as possible. Malolactic fermentation is completed.
Ageing
After malolactic fermentation the wine ages in steel tanks with regular bâtonnage until March, when it is bottled.

Label / history
Azienda Agricola Cavalchina was founded in the early twentieth century, when the Piona family bought its first vineyards in the village of Custoza, in Soave. The wines soon became well known and popular. The Piona winemakers then chose to name them after their place of origin, Custoza, rather than Soave as before. The estate's approach rests on three principles: the local terroir, careful vineyard management and precise winemaking. Grape varieties are chosen to suit the local climate and soils.
