Vineyard and terroir
The vineyards lie on south-facing slopes at 100 to 140 metres above sea level. The soils are limestone and clay-moraine, with pockets of gravel. Yields are deliberately kept low so that the grapes stay healthy and juicy, and the varieties are chosen to suit the climate and soils.
Grapes
The blend combines Garganega, Fernanda (a Cortese clone), Trebbiano and Trebbianello (a Tocai clone).
Vinification
Each variety is picked by hand into crates at its own time, from the second week of September to the end of October. The varieties are also handled separately: destemmed, pressed and clarified, then fermented at 16–17 °C for 10–15 days. Only Fernanda undergoes cold maceration before pressing.
Ageing
The wine develops fully on the lees. The final blend is assembled in January–February of the year after the harvest.

Label / history
Azienda Agricola Cavalchina was founded in the early twentieth century, when the Piona family bought its first vineyards in the village of Custoza, in Soave. Its wines soon became well known. The Piona winemakers chose to name them after their region of origin, Custoza, rather than Soave, as they had done before. The estate's approach rests on three principles: the local terroir, careful vineyard management and precise winemaking.
