Vineyard and terroir
The production area is Montepulciano, in the province of Siena. Selected white grapes come from the vineyards of Fattoria del Cerro.

Vinification
The grapes are softly pressed. A long, slow first fermentation proceeds at a controlled 12–14°C to preserve aromatic concentration. The wine remains on its fine lees for three months. At bottling, liqueur de tirage is added to initiate the traditional-method second fermentation.
Ageing
The second fermentation and subsequent maturation last for at least 24 months.
Tasting profile
Intense straw yellow with golden reflections. The bouquet combines floral notes with bread-crust aromas. The palate is full, with a fine, persistent perlage.
Serving and pairing
Suitable as an aperitif and with fish-based starters, vegetables, cheeses, shellfish, and pasta or risotto prepared with fish or vegetables.
Label / history
Cerrus was the first traditional-method sparkling wine produced by the Tenute del Cerro estates, created from selected white grapes grown at Fattoria del Cerro.
