Vineyard and terroir

The production area is Montepulciano, in the province of Siena.

Grapes

Sangiovese, locally identified as Prugnolo Gentile.

Vinification

The grapes are softly pressed. A long, slow first fermentation proceeds at a controlled 12–14°C to retain aromatic concentration. The wine then rests on its fine lees for three months. At bottling, liqueur de tirage is added to begin the traditional-method second fermentation.

Ageing

The second fermentation and maturation continue for at least 24 months.

Tasting profile

Pink with violet reflections. Red-fruit aromas emphasize raspberry and cherry. The palate is full, with a fine, persistent perlage and enough depth and richness to accompany food.

Serving and pairing

Ideal as an aperitif, with sufficient depth for white meats; pizza is also recommended.
