Vinification
An aromatized sweet wine made from a recipe comprising 26 separate infusions of herbs and fruits.
Technical data
16% alcohol by volume and 18% residual sugar. Presented in a 750 ml Bordeaux bottle, packed 12 bottles per case. The wine is luminous amber, with pronounced depth and a viscous movement in the glass reflecting its alcohol and sugar content.
Tasting profile
The nose is intense, broad and complex, shaped by natural aromatic essences. Sweet spices, aromatic herbs and honey are the recurring notes. On the palate, sweetness is balanced by refreshing acidity, preventing the wine from becoming cloying. The entry is broad and generous; the finish is moderately warm and notably persistent.
Serving and pairing
Serve cool but not ice-cold, ideally at 10–12°C. It can be opened immediately before serving and remains in good condition for several days when stored in the least-cold part of a refrigerator. Suitable at the end of a meal with dessert, particularly shortcrust pastries and chocolate, or with dried fruit. It may also be enjoyed neat, used for a celebratory toast or mixed into cocktails.
Label / history
The recipe originated in the early 20th century with Armando Pichi, a wine merchant who owned a small distillery in Livorno. His formula combined 26 calibrated infusions of herbs and fruits to create a sweet after-dinner wine. Production subsequently passed through several Tuscan businesses before Alessandro Cicali acquired the recipe and trademarks and relaunched it.
Ronchì Pichi became associated with graduation celebrations in Tuscan university cities. Its role later expanded from a traditional home-bar bottle to a cocktail ingredient. Two vintage-style labels distinguish the channels: white for wine shops and blue for large-scale retail.
