Vineyard and terroir
The grapes come from the Cascine Drago vineyards in Piedmont. Their elevation and aspect help preserve the variety's acidity and precise aromas.
Vinification
The grapes are picked by hand and gently pressed. The must is settled at 8–10 °C for 24 hours to separate the solids. Fermentation takes place in stainless steel tanks, and no malolactic fermentation is carried out, which keeps the wine clean and taut.
Ageing
The wine ages on fine lees, which adds a subtle layer of texture.
Tasting profile
Clean and mineral. Citrus and green apple notes are balanced by bright acidity and a distinctly salty freshness, with hints of wet slate that reflect Piedmont's soils. The wine is focused and fresh, with bright citrus flavours and a mineral finish.
Serving and pairing
Suited to an aperitif, and to dinners of freshwater or saltwater fish, crustaceans and other seafood.
