Vineyard and terroir
The Grillo is organically grown in Sicily's Belice River valley at 480 m above sea level.
Vinification
The grapes are harvested by hand from late August through the second ten-day period of September. They are gently pressed, and the must is clarified statically at a low temperature for 24 hours. Fermentation runs at a controlled temperature of around 16 °C with selected yeasts. The sulfite content is low, at 50% of the maximum limit.
Ageing
The wine rests in stainless steel tanks for around 4 months, then at least 3 months in the winery's cellars after bottling.

Flavourful, full-bodied and intriguing, with a distinctive citrus aroma.
Label / history
Vitese is Colomba Bianca's organic range of nine wines: reds from Nero d'Avola, Syrah and Cabernet Sauvignon; whites from Lucido, Zibibbo, Grillo, Chardonnay and Sauvignon; and a rosé from Nerello Mascalese. The name comes from the Vitese cellar, surrounded by the countryside of Vita. The label shows a cedar, a tree typical of the area, identifying where the wines come from.
