Vineyard and terroir
The fruit is grown in the municipality of Mazara del Vallo in Trapani, following organic farming standards.
Vinification
The grapes are harvested by hand into small baskets and processed promptly to preserve their character and that of the terroir. They are pressed gently to retain the must’s aromas and natural acidity. The must is clarified by static settling at low temperature before fermentation.
Ageing
The wine rests in stainless-steel tanks for approximately five months.
