Vinification
A traditional Barolo DOCG aged for three years forms the base. Cinchona bark and 27 additional spices and herbs—28 botanicals in total—steep in the wine for 90 days.
Ageing
After bottling, the wine rests for another 90 days before release.

Tasting profile
Deep garnet red with brick-red highlights. The complex, persistent bouquet centres on spices and aromatic herbs, led by cinchona bark, cinnamon and rhubarb. Generous and mouth-filling, it has a velvety texture and a pleasantly bitter finish.
Serving and pairing
Serve at 17–18°C. Intended as a digestif and particularly suited to dark chocolate with 70–80% cocoa; it may also be enjoyed on its own as a meditation wine.
Label / history
Barolo Chinato became popular in Piedmont toward the end of the nineteenth century as a fortifying elixir. It continues to follow the original recipe based on mature Barolo infused with cinchona bark, spices and herbs.
