Vinification
The grapes are fermented in stainless steel tanks at controlled temperature. Once all the sugar has fermented, the wine stays in the tanks for about another week to extract the tannins needed for further ageing.

The wine is aged in barrels made from different types of wood.

Traditional Marsala style includes wines made from late-harvest grapes and concentrated must with a higher sugar content, with alcohol added to reach 18%.
