Vineyard and terroir
The grapes grow in the estate’s vineyards in the province of Caltanissetta, at 400–500 metres above sea level.
Vinification
Shortly before harvest, half of the vines are cut off from their water supply and turned in a particular way, allowing the grapes to dry on the vine under the hot Sicilian sun using the appassimento method. The wine macerates on the skins for 12 days, then ferments for 10–15 days at a controlled temperature of 24–26 °C.

Vintage notes
The 2020 growing season was warm and dry, with favourable conditions typical of Sicily. There was a slight drought but no extreme heat, while light winds helped maintain healthy growing conditions across the island. Temperatures fell in late July, and heavy rainfall replenished groundwater reserves and slowed ripening. The considerable difference between daytime and nighttime temperatures resulted in a harvest with excellent acidity balanced by phenolic ripeness.
