Vineyard and terroir
The grapes grow on Cannubi hill, in soils combining clay and limestone with a high proportion of sand. The vines are between 30 and 50 years old on average.
Vinification
The grapes are harvested only at optimal ripeness, then fermented at a controlled temperature for 20 days.
Ageing
The wine matures for 24 months in large oak casks, followed by 12 months in bottle in the winery’s cellars.
Serving and pairing
Serve at 16–17 °C.
