Vineyard and terroir
The grapes grow in eastern Veneto on alluvial soils particularly rich in clay, limestone and minerals. The mild climate features marked differences between daytime and nighttime temperatures during ripening, helping to preserve bright aromas and acidity. Vineyard work includes summer pruning, careful leaf thinning, short pruning and an annual green harvest. Yields are kept very low, only organic practices are used, and the vines are not irrigated.
Vinification
The grapes are harvested in early September, then destemmed, crushed and gently pressed. The must is cold-settled before fermentation in steel tanks at a controlled 18 °C, using only wild yeasts. Secondary fermentation takes place in sealed, pressurised tanks according to the Italian Charmat method.
Ageing
The wine rests for several months on fine lees in stainless-steel tanks, with frequent bâtonnage to develop a soft, smooth texture.

Refreshing, with bright aromas and acidity and a soft, smooth texture.
Label / history
The name “DS” is formed from the initials of De Stefani, a family that has made wine in Veneto for five generations. The wine belongs to a range of young, fruit-forward wines presented in modern packaging.
