Vineyard and terroir
The grapes grow in the hills of Valdobbiadene, where a mild climate and marked day–night temperature differences during ripening help preserve aroma and acidity. The vineyards are farmed organically without irrigation. Short pruning, summer pruning, careful leaf thinning and an annual green harvest are used, while yields are kept very low.
Vinification
The grapes are harvested by hand in mid-September, then destemmed, crushed and gently pressed. The must is cold settled before fermentation in steel tanks at a controlled 18 °C using only wild yeasts. Secondary fermentation takes place under pressure in sealed autoclaves according to the Italian Charmat method.
Ageing
The wine rests for several months on fine lees in stainless-steel tanks, with frequent bâtonnage to develop a smooth texture.
Tasting profile
Straw yellow with an elegant sheen and a fine stream of bubbles. The fresh, fruity nose is led by ripe apple and juicy pear, while the texture is light and smooth.

Suitable as an aperitif.
