Vineyard and terroir
The grapes come from the Colvendrame estate in Veneto, on the hills between Conegliano and Valdobbiadene, a UNESCO World Heritage Site. The vineyard occupies the hill known as Colvendrame, within the production area of Colli di Conegliano DOC and Prosecco di Conegliano e Valdobbiadene DOC, at approximately 300 m above sea level. The clay-rich soil, locally called creda, releases water and nutrients slowly and continuously. The site has marked differences between daytime and nighttime temperatures. The vineyard is farmed organically, with short pruning, annual green harvesting and no irrigation, resulting in low yields.
Vinification
The grapes are harvested in early September, placed in dedicated crates and transported to the cellar. After pressing, the must is chilled to 0 °C and undergoes a single fermentation at 15 °C, preserving its fruit aromas, particularly golden apple.
Tasting profile
Crystal-clear straw yellow with delicate greenish highlights and a fine, persistent stream of bubbles. The nose combines green apple, pear and light floral notes, with an additional note of golden apple. The palate balances bright acidity with gentle sweetness.
