Vineyard and terroir
The vineyards lie between the Adriatic Sea and the Dolomite Alps and have clay soils. They are densely planted and farmed organically, without irrigation. The vines are short-pruned, and a green harvest is carried out annually to maintain low yields.
Vinification
The grapes are harvested entirely by hand at the end of October, at peak colour and aroma. After destemming, a portion is dried to increase concentration and richness. The fruit is then crushed and macerated before fermenting in temperature-controlled concrete tanks with frequent pumping over. The concrete contributes to a softer texture.
Ageing
The wine rests for 48 months: 12 months in French barriques, 12 months in Slavonian oak barriques, 12 months in terracotta amphorae and 12 months in bottle. Bottles should be stored horizontally in a cool, dark place.
Tasting profile
Deep ruby red with garnet highlights. The nose opens gradually with fresh berries and refined notes of leather and tobacco. The palate is soft, rich, harmonious and balanced, with vivid, complex aromas and concentrated flavour.
