Vineyard and terroir

The vines grow on clay soil on land once occupied by an elm forest, remnants of which remain deep underground. The vineyard is farmed organically without irrigation. Short pruning, annual green harvesting, summer pruning and careful leaf thinning are used to promote ripening, while yields are kept very low to concentrate flavour and aroma.

Vinification

The grapes are harvested during the first half of September. The Tocai Friulano is dried for one month, during which noble rot develops on the berries; the Sauvignon Blanc is not dried. After destemming and crushing, the grapes are gently pressed and fermented at a controlled temperature. The Tocai Friulano is vinified in barriques and the Sauvignon Blanc in concrete tanks.

Tasting profile

Tocai Friulano contributes fullness and structure, while Sauvignon Blanc brings aroma and elegance. The wine has a rich, deep and rounded flavour, with character and firm structure.

Vintage notes

In 2020, January and February were very mild and relatively dry. Heavy rain and normal temperatures followed in March, while a cool spring prolonged flowering. Summer was pleasant, without extreme heat, and hot days combined with cool nights in August allowed slow, steady ripening. Yields were approximately 5% below the average of the preceding five years. The vintage's white wines show an expressive aromatic profile, minerality and complexity, with acidity and alcohol in balance.

Label / history

The name “Olmera” refers to the “olmera,” or elm forest in the local dialect, that formerly occupied the vineyard site. The De Stefani family has grown vines and made wine for four generations; over that period, the estate expanded and its vineyard practices evolved.
