Vineyard and terroir
The grapes are grown on old vines at the La Ronche estate in the Fossalta di Piave area. The soils are alluvial and rich in clay. The mild climate brings little rainfall and high summer temperatures. The estate uses organic methods, short pruning and annual green harvesting, without irrigation, resulting in low yields.
Vinification
The grapes are gently pressed, then fermented at a controlled temperature of 18 °C.
Ageing
The wine rests on its lees for several months.
Tasting profile
The clay-rich soils and old vines give the wine an elegant structure.
Label / history
“Tai” means “a glass of wine” in the local dialect. Italian law prohibits “Tokay” from appearing on Italian wine labels, so Veneto producers were permitted to use “Tai” for wines made from the Tokay grape variety. The De Stefani family has grown vines and made wine for four generations; during that time, the estate has expanded and its vineyard practices have evolved.
