Vineyard and terroir
The grapes grow in the Vulture area, on the slopes of an extinct volcano at an altitude of 500 m. Cantine del Notaio has farmed its family vineyards according to biodynamic principles since 1998. The estate’s 26 ha of vineyards are divided into five plots with different soil types.
Vinification
The grapes are hand-harvested into small crates in the first week of November, once fully ripe. Maceration lasts about 20 days and extracts ripe tannins.
Ageing
The wine matures for at least 12 months in French oak barrels, housed in natural volcanic-tuff caves formerly belonging to Franciscan monks, followed by a further 12 months in bottle.
Tasting profile
Powerful and distinctive, with good structure, a smooth, almost plush texture and a highly complex aroma. After four to five years, it develops balance and elegance and becomes more approachable.
Label / history
The name La Firma means “signature” in Italian.
