Vineyard and terroir

The 2 ha vineyard lies in Montalto, within the municipality of Biancavilla, on Etna’s southern slope. Although Montalto is not formally classified as a contrada, it was selected after six years of experimental vinifications. Its 900–950 m elevation and constant breezes temper the full southern exposure.

The deep, loose and dark volcanic soil is rich in ash and includes small stones. The page gives a vine-age range of 60–90 years, while the technical sheet records 50–70 years. Training combines en goblet and modified en goblet systems.

Vinification

Harvest occurs in the second week of September. Soft pressing is followed by low-temperature fermentation in stainless-steel tanks.

Ageing

Nine months in stainless steel.

Technical data

Yield is 6 t/ha. Alcohol is 13%. Annual production is 6,000 bottles of 750 ml.

Tasting profile

Straw yellow with golden highlights. The nose is mellow, floral and fruity. The palate is inviting and finishes with creamy persistence. The broader style combines voluptuous softness, spicy warmth, full alcoholic vigour and balanced freshness.

Serving and pairing

Serve at 10–12 °C with light pasta dishes, fish or white meats.

Label / history

The first vintage was 2019. The site traces the wine to Marco de Grazia’s exploration of Etna’s eastern and southern sectors and six years of experimental work with high-altitude southern Carricante before acquiring this small old vineyard.
