Vineyard and terroir
The organically grown fruit comes from a 1.5 ha vineyard in the municipality of Milo, on Mount Etna’s eastern slope in the province of Catania. The site lies at 600–750 m above sea level and has deep volcanic soil rich in ash and pebbles. Cool air, abundant sunlight and pronounced day–night temperature differences extend the ripening season, allowing the grapes to achieve phenolic ripeness while retaining natural acidity. The vines average 30–60 years old.
Vinification
The grapes are harvested at optimal ripeness and gently pressed. Fermentation takes place at a controlled low temperature in 5–10 hL French oak barrels, followed by malolactic fermentation to soften excess acidity.
Ageing
The wine matures in barriques for nine months.
Tasting profile
Elegant and delicate, with fruit and floral aromas. The palate is lively, mineral and very fresh, with a distinct salty character. Ageing brings smoothness, balance and subtle smoky notes.
Serving and pairing
Pair with seafood and fish dishes.
