Vineyard and terroir
Calistri comes from the estate’s oldest vineyard, an eponymous 2-hectare plot overlooking the castle. Planted in 1972, it was originally trained using the traditional Umbrian–Tuscan capovolto method and has since been converted to spurred cordon with six to eight buds. The vineyard occupies hilly ground at 250 m above sea level with a south-to-southwest exposure. Its loose, alluvial soil is rich in mineral particles. Yield is restricted to no more than 5,000 kg/ha, and annual production is capped at 3,000 bottles.
Grapes
100% Sangiovese. The grapes are hand-picked from the estate’s oldest vines, with careful selection of the best bunches.
Vinification
Harvest takes place from mid- to late September. Fermentation proceeds in stainless-steel vats at a controlled 25–28°C. Maceration lasts 15–18 days, with regular manual punch-downs. Malolactic fermentation takes place in small French oak casks.
Ageing
The product description gives 16 months in small French oak casks, while the dedicated wine page specifies 16–18 months in 225-litre French oak casks. This is followed by 7–9 months of bottle maturation in temperature-controlled cellars maintained at 15–16°C.
Tasting profile
Rich ruby red. Violet and tobacco lead the nose, joined by ripe dark-fleshed fruit and sweet liquorice. The palate is full, rounded and enveloping, with soft tannins, balanced structure and a persistent aftertaste.
Serving and pairing
Suited to flavourful, succulent dishes, particularly steak and mature cheeses.
