Vineyard and terroir
The Orzalume vineyard occupies south- to southwest-facing hillsides at 320 m above sea level. Its soil is an ancient Pliocene seabed of sand and clay, rich in seashells and fossil coral. The combination of this marine-origin soil and the sunny exposure supports aromatic expression, freshness and elegance. Vines are trained to spurred cordon with 8–10 buds, and yield is limited to 8,000 kg/ha.
Grapes
70% Grechetto and 30% Sauvignon Blanc, combining the local white variety with Sauvignon Blanc.
Vinification
Harvest takes place from mid- to late September. The vinification data specify steel vats at a controlled 15–18°C. A separate maturation description says the wine is transferred to small casks, where alcoholic fermentation and the subsequent malolactic fermentation occur.
Ageing
The wine stays in small wooden casks on its fine lees for about five months, gaining flavour and structure through yeast lysis. It is then racked, blended and bottled, followed by four months of bottle ageing.
Tasting profile
Bright straw yellow with golden highlights. Aromas centre on ripe yellow-fleshed fruit, especially peach and melon, accompanied by sweet spices. The palate is complex, structured and mineral: Grechetto's immediate freshness gives way to the elegance of Sauvignon Blanc, followed by ripe fruit and oak-toned notes on the finish.
Serving and pairing
Pair with semi-hard cheese, white lasagna, risotto flavoured with curry or truffle, stuffed rabbit or beef rolls.
