Vineyard and terroir

Pallianum is sourced solely from the Ponticello vineyard beside the winery headquarters. The plot lies next to a strip of land once occupied by the Tiber and has pebble-rich alluvial soil. It stands at 110 m above sea level with a south- to southwest-facing exposure. The vines are trained to spurred cordon with 6–8 buds, and yields are limited to 7,000 kg/ha. Vineyard work seeks to maintain balance between vegetative growth and fruit production throughout the phenological cycle.

Grapes

100% Cabernet Sauvignon, harvested from late September to early October.

Vinification

The grapes are vinified at 25–28°C. Maceration lasts 12–15 days, with regular manual punch-downs to break the cap.

Ageing

The wine matures for 12 months in small French oak casks, then spends 5–6 months in bottle in thermoregulated cellars maintained at 15–16°C.

Technical data

The 2022 wine has 14% alcohol.

Tasting profile

Intense ruby red with violet glints. The varied bouquet combines red berries and ripe plum with herbaceous nuances, tobacco and vanilla. Full and round on the palate, it has abundant soft tannins and a pleasantly lingering finish.

Pair with grilled meat, rich juicy dishes or aged cheeses.
