Vineyard and terroir
The grapes come from Il Poggio, a vineyard at the top of a hill at 350 m above sea level. The soil developed from ancient Pliocene seabeds and contains deep sand and clay together with fossil shells and oysters. Its elevated, open position brings fresh summer breezes and pronounced temperature variation, supporting aromatic development while the soil contributes savoury, mineral character.
Grapes
Blend proportions vary by vintage. From the 2022 harvest, the blend is predominantly Grechetto and may contain up to 15% Chardonnay. The inaugural 2018 production was conceived as a new sparkling expression of Grechetto.
Vinification
The bunches are harvested by hand at full ripeness, with careful selection in the coolest hours of the morning to preserve acidity and fragrance. The base wine is vinified at a controlled 12–15°C. Yeasts are then inoculated to initiate the second fermentation in bottle by the traditional method.
Ageing
The wine remains in contact with the lees for approximately four years in a temperature-controlled environment at 15°C. It is finished as Pas Dosé, without sugar added to the liqueur d’expédition.
Tasting profile
Fine, persistent perlage and a bright golden-yellow colour. Aromas recall salted peanuts, toast, fading yellow flowers and ripe yellow fruit. The palate begins with a broad, vinous presence before becoming more slender and fresh. Savouriness and minerality reflect the soil, while Grechetto contributes an almond-like finish. The acidity gives the wine a distinctly gastronomic profile.
Serving and pairing
Serve at 8–10°C. Pair with seafood or mushroom risotto, shellfish, salmon, seafood, artisanal mortadella made from Cinta Senese pork, white meat or guinea fowl. It can accompany an entire meal.
Label / history
First produced from the 2018 harvest after studies intended to present Grechetto in a new guise. The Pas Dosé approach was chosen to leave the grape and terroir unmasked by dosage.
