Vineyard and terroir
The pure Grechetto comes from Torricella, a historic hillside vineyard overlooking the Tiber River. The plot lies at about 230 m above sea level. Its loam-and-clay soil contains pebbles and alluvial sediments and has good porosity. The production data specify a south-to-southwest exposure, while the introductory vineyard description places the plot on the west-facing side of the estate. The vines are trained to spurred cordon with 8–10 buds, and yield is limited to 8,000 kg/ha.
Grapes
100% Grechetto. The estate has reproduced and replanted its local Grechetto biotype to preserve its distinctive characteristics.
Vinification
Harvest takes place in mid-September. Vinification occurs in stainless-steel vats in a temperature-controlled cellar at 15–18°C. Alcoholic fermentation lasts approximately one month.
Ageing
After vinification, the wine remains on its lees for two months. Yeast lysis contributes flavour and structure. It then receives approximately two months of bottle ageing before release.
Tasting profile
Straw yellow with pale-green highlights. The nose is delicate and fruit-led, particularly peach and apricot. The palate is fragrant and moderately acidic, finishing with a fine fruity aftertaste.
Serving and pairing
Pair with cured meats, fried bites, savoury pies, delicate first courses, fresh cheese or white meat.
